Barbarea vulgaris
Winter-hardy type of cress with aromatic, tender leaves, e.g. for salads or pesto.
This robust type of cress provides valuable vitamins in winter and tastes slightly hot due to the mustard oils. When cooked, the leaves lose their sharpness and can then be prepared like spinach. The name "Barbarian cress" is associated with the fact that December 4th is Barbara Day and the plants remain green despite the cold. The winter cress is not choosy when choosing its location and the grateful plants are happy to sow themselves again. The winter cress can also grow in pots and balcony boxes without any problems and the yellow flowers are also edible.
